Pinakbet is a mix of bitter melon, Asian eggplant, string beans, squash, tomatoes, and chicken breast, stir-fried with onion, garlic, ginger, and other seasonings. It is a popular Filipino dish!
We've demonstrated how to plant Asian tropical vegetables in Shadle's Discovery Garden this summer. Now, we're excited to show you how to cook them! This Cook-a-Thon will feature each of the Asian vegetables grown and nurtured throughout the season by the Filipino American Association of the Inland Empire. This dish, in particular, features all four Asian vegetables that represent the theme of the Discovery Garden this summer: popular tropical Asian vegetables.
